Add Dockerized Certbot Setup

This PR introduces a fully Dockerized workflow for issuing and renewing Let's Encrypt wildcard certificates using the certbot-dns-stackit plugin. It includes a custom Docker image, docker-compose configuration, and automation for permission handling and certificate renewal.

• Certs are saved in letsencrypt/live/
• Easily integratable into Nginx, Traefik, or other services
